All you need are some corn tortillas (it doesn't matter if they're white or yellow corn. Just don't use flour tortillas), oil for frying, some salt, and preferably, a pizza cutter. This is not the first time you'll hear me talk about using my pizza cutter for something other than cutting pizza. I'm a deviant, I'll admit it.
Stack the tortillas directly on top of each other. I didn't stack them directly on top of each other in this picture because I wanted to show you the pretty tortillas. Do as I say, not as I do...
In a pan or skillet, heat about a 1/4 inch of vegetable oil (I use canola) to medium heat. Using your pizza cutter, cut the tortillas into thin strips.
Test your oil by flicking a bit of water into it. If it sizzles, it's ready. If it splatters, it's too hot--turn down the heat and try again in a few minutes. When the oil is ready, toss your tortilla strips into the hot oil and stir them around on a regular basis so they don't burn.

oooo-this looks yummy. i just tried my hand at homemade taquitos the other day and we've got a bunch of corn tortillas leftover. now i know what else i can do with them! can't wait to try. (oh, and we've got a bunch of spinach too, so this should add some pizazz to our salads!)
I am making your tortilla soup for a get together on Sunday. I am wanting to make the taco chicken to go in the soup and fry the tortilla strips as well. Could I make the chicken and the tortilla strips the day before? Thanks for your help! I can not wait to try this recipe. Love your blog.
I like to bake these in the oven and they turn out great (without the mess of the frying pan!) Slice them up like you said, spray them with Pam (or brush with oil), spread them out on a cookie sheet and bake for 10-15 minutes at 400 degrees. Sometimes I sprinkle them lightly with salt before baking! :)
