Pineapple Bacon Burgers

Ingredient Notes

Pineapple Bacon Burgers are exactly what they sound like- and they’re amazing! A simple, flavorful burger on a soft brioche bun, topped with grilled pineapple, crispy bacon, and bbq sauce. These burgers are restaurant-quality delicious, you’ll want to make them all year long!

Ingredients and Equipment

  • Beef – I use lean ground beef, which is at least 92% lean, 85% ground beef is perfectly delicious (probably more so!) as well.
  • Pineapple – I like to use fresh pineapple, but if you like you could used sliced, canned pineapple. Grilling canned pineapple is a little tricky though, since it’s not as firm, you’ll have to be very careful there. When using fresh pineapple, I use a small biscuit cutter to cut out the center core of my slices. You could just use a knife if you do not have a small cutter of some sort.
  • Barbecue Sauce – Use your favorite bottled sauce, or whip up a batch of this Quick and Easy Barbecue Sauce.
  • Bacon – You only need a slice or so for each burger. If you prefer not to have leftover bacon to use up, simply grab a few slices from your store’s butcher case, or even use pre-cooked microwave bacon.
  • Buns – Any bun will do, though I prefer a brioche bun. Hawaiian sweet buns are also delicious. You could even try your hand at homemade hamburger buns.

How To Make Barbecue Bacon Burgers

  1. Preheat grill to medium. Combine ground beef, salt, and barbecue sauce, and form into 4 patties.
  2. Place burgers and pineapple slices on grill.
  3. I like to mix a 50/50 combo of bbq sauce and mayo, but you could use both of those things separately if you prefer. Spread sauce on buns, place burgers on top, top with the slice of pineapple, bacon, and an extra drizzle of bbq sauce.

Frequently Asked Questions

Can I make these ahead of time? Feel free to combine your ground beef and barbecue sauce and form patties ahead of time. Separate with layers of plastic wrap or parchment, cover, and store in the refrigerator. You could also cook your bacon ahead of time. If you are making buns or sauce from scratch, those can also be done the day before.

Description

Tender burgers with sweet grilled pineapple, bacon, and bbq sauce.

Ingredients

Burgers
1 pound lean ground beef
1 teaspoon kosher salt
2 tablespoons bbq sauce

Additional ingredients
4 brioche hamburger buns
mayo
48 slices bacon, cooked
4 slices fresh pineapple, about 1/31/2 inch thick
additional bbq sauce

Instructions

  1. Preheat grill to medium.
  2. Combine ground beef, salt and 2 tablespoons of your favorite bbq sauce.
  3. Shape into 4 patties, and flatten to roughly the same size of your buns (they will shrink some during cooking).  Place burgers on the grill and cook for a few minutes on each side, until the internal temperature registers 160 degrees.
  4.  When you flip the burgers, add the pineapple slices to the grill, making sure you get a chance to flip them once as well.  They should be tender and have some char marks on them. 1-2 minutes on each side should be sufficient.
  5. If desired, toast your buns. Spread mayo on each side, or what I did in my photos is a 50/50 mix of mayo and bbq sauce.
  6. Place burgers in buns, top with the slice of pineapple, top with 1-2 slices bacon, and an extra drizzle of barbecue sauce.

Questions & Reviews

  1. HOOOOOOLY COW! These are phenomenal! I’m not the type of gal to eat two burgers, but I sure almost did. But instead of only 2-3 Tbsp sauce in one pound beef, I do six tbsp sauce per pound. (3/4 cup for two pounds.) My preference is Sweet Baby Rays. I love you ladies!!!!!!!!!!

  2. We make something similar but instead of doing barbecue sauce I use teriyaki sauce. It is so so yummy! And no bacon but yes on the pineapple, lettuce, tomato, and some mayo–stole the recipe idea from Red Robin. And it is so so good!

  3. Made these tonight and instead of the normal “it’s pretty good” from my hubby.. I got “You need to keep this recipe, you have to make these again!” and I couldn’t agree more!! 🙂 YUMMMMMMM!

  4. Looks good! Here's another burger combo to try – bacon, pineapple, red onion rings, (and the burger), topped off with your Zesty Blue Cheese Dressing. YUMMY!

  5. I have made a very similar burger for years-yummy! I have to go w/Pierce in the Bond category. I have loved him since he was Remington Steele on TV in the 80's. Tasty-Pierce and the burger…

  6. "Being a Scot" (Sean's biography – pun intended!), Dr Blockbuster thinks Sean Connery was the best Bond, and from Russia with Love, the best film.

  7. Although Sean Connery is classic, I must admit to being a Daniel Craig fan.

I used to go to see the Bond movies with my hubby (just to humor him), but I never really liked Pierce. (Although my MIL thinks he’s dreamy!) I never really *liked* a Bond movie until Casino Royale. (I’m with Kate on this one.)

  8. Ok so I made these for dinner and the kids and hubby just gobbled them up. They were super delicious. I didn’t have a pineapple ring so i smashed up pineapple chunks and put on the burgers like paste. Worked great. My oldest son says….MOM why don’t you just buy the cookbook so you don’t have to look up recipes all the time. =0) How sweet.

  9. Those look wonderful. I am going to make them tonight. Thanks for the great idea’s. I really like your site and appreciate all the hard work you guys put into it.

  10. Yeah those are some pretty good looking…..hamburgers! We have enjoyed these burgers for years now, just without the BBQ sauce. That is definately something to try, especially with your BBQ sauce posting!

  11. ha ha ha ha ha ha. . . I’m laughing my head off at the burger/bond comparisons. You’re SO RIGHT though!

  12. Sean Connery. Period. End of discussion.

I cannot wait to try these burgers. I love your blog!

  13. So, in case there’s any doubt in your mind, I’m a Daniel Craig fan. I always thought Bond movies were silly before Casino Royale, but I LOVED it and I loved Daniel Craig in it. I can’t wait for the next one!

  14. WOW! Looks delicious!

And I have to go with Sean Connery. Though I can’t say I’ve seen too many Bond movies.

  15. That burger looks awwwwesome. Can’t go wrong with bacon and pineapple together!

On the subject of Bond- I think Sean Connery is a classic!

I’ll also have you know that my husband thinks the burgers look great too, but is choosing to opt out of comments today due to the hot movie star talk 🙂

  16. Yummy!!

BTW! Stubbs brother-in-law and sis lives right her in Meridian only about a mile away! I feel as if I know a celebrity!! haha

  17. I’m not a big James Bond fan, but wasn’t Thandie Newton one of the bond girls? Is it sad that I remember the women better than the men?

Anyway, I love bacon on burgers. And pineapple gives it a Hawaiian twist. I’ll have to try it next time!

  18. Daniel Craig! Yummy, lol. And that burger looks delicious. Definitely something that Matt would love. Thanks for the good food, and good eye candy!
