Smoky Honey Mustard Pork Chops

Can you believe we’re at the end of Healthy January? And can I tell you all how badly things are going for my diet right now? Yeah, I have a batch of cinnamon rolls rising right this very minute. It’s been a very long day that was just made infinitely longer when I learned that The Office and 30 Rock are re-runs tonight. I nearly cried. And yes, I do realize how very pathetic that sounds. What can I say, …

Chocolate Shortcakes with Bananas and Caramel

Okay, did you REALLY think we were going to make it through the whole month without posting two sweet treats in a row? I mean, really, who do you think we are?? Luckily for you and your diet, this recipe is surprisingly un-terrible for you. I mean, you don’t want to go out and eat the whole pan of shortcakes (who DOES that?? Oh, wait, me…) And please don’t balk at the Cool Whip. It’s a dieter’s friend and here, …

Black Bean Soup

Every time I make this soup I think of this clip from Ratatouille. And it’s not because of any filthy vermin sticking their nasty paws into my soup (was anyone else grossed out by that?) It’s because of Anton Ego’s childhood flashback. I love the way his eyes get huge as it zooms him back to his boyhood home. My flashback isn’t to my childhood (if it was then this would be a post about some sort of heart-warming casserole …

Healthy Eating Tips

So now that we’re about two weeks into healthy eating month, reality is setting in. I don’t know about you guys, but I’m ALL good intentions until I become pre-menstrual and mean old ladies start giving my loud children and I dirty looks at church and then I become a snivelling ball of chocolate-chip-cookie-dough-craving baby. Let’s face it–the daily grind can wear you down, January is a rough month for a lot of people, and the economy right now could …

Mini Ham and Egg Cups

Science has been telling us for years (ya know, because me and science are tight) how important it is to eat a good breakfast in the morning, but for a lot of people that’s difficult for a number of reasons. A major one being that you just don’t have the time, period.   When I was pregnant with my first baby, my doctor told me in order to curb the rapid weigh-gain I was experiencing, I needed to replace my …

Tuna Salad

As a kid, we ate a lot of tuna our house. Like if we ever said, “Hey, I’m hungry!” the automatic response was, “We have tuna and crackers in the cupboard.” Mayo optional. Suffice it to say that I wasn’t a huge fan of tuna sandwiches growing up. When I was in college and worked in a sandwich shop, I discovered that tuna sandwiches don’t have to be disgusting! Even better is its versatility–I got this recipe from Allrecipes and …

How To: Roast Red Peppers

I had a request for this tutorial, and I’ve been wanting to do it for a while now, but it kept getting put off. So today is the day! I’ve explained this so many times to people, but it’s one of those things that’s much easier to do if you have a visual example. It’s no secret that I love roasted red peppers. I put them on panini, pasta, pizza, dips, eggs and omelets, salads and more. Most people buy …

Hawaiian Turkey Burgers

So I have this friend Kat (Hi, Kat!) who apparently thinks that cooking isn’t her thing. Little does she know that this recipe that I got from her is seriously one of our family’s favorite meals. The best part is that it’s just not super delicious, but it’s super healthy as well–low in calories and fat and high in lean protein. It’s seriously good enough for company and no one will ever know it’s good for them. Shhhh…I won’t tell. …
