Baked Creamy Chicken Taquitos

Taquitos! Just in time for Cinco de Mayo. One of my pet peeves is when people say that a healthier version of a traditionally unhealthy food tastes just as good. When it obviously doesn’t. “You’ll never know it’s light!” Ya, maybe if you’ve never tasted real food, but most of the time that’s just crap. Anyone who has followed counsel of the diet books to make spaghetti with spaghetti squash instead of pasta knows what I’m talking about. So when …

Spaghetti and Meatballs

Or Spa-Peggy and Meatballs. Anyone? Anyone? Okay, in case you haven’t noticed, I’m a hard-core carb-lover here; pasta and bread are my ultimate comfort food. And does it really get any more homey and comforting than spaghetti and meatballs? Not in my world! I didn’t actually eat spaghetti and meatballs, like, ever growing up; my family was more of the “mix a pound of ground beef with a jar of Ragu” kind of clan, which is totally fine. But there …

Chocolate Toffee Sugar Cookies

This past Valentine’s Day my husband had to be at work all day. Half way through the day I decided I should be a good wife and take some goodies in. My husband loves these sugar cookies. Loves them. He especially loves them with a fluffy pile of sweet buttercream frosting on top. However, I was taking the treats into everyone and I wanted to pack them in a cute Valentines basket I had so fluffy frosting wouldn’t work. And …

Roasted Garlic-Tomato Spread (and a grown-up breakfast sandwich!)

The magic mayo strikes again! I told you guys I have lots of magic mayo concoctions, I’m surprised it’s taken me this long to post another. It’s amazing how adding some punch to your mayo can totally transform every day foods like sandwiches and burgers. And this one is probably as easy as it gets. 4 ingredients! I’m on a kick this week with the low ingredient lists. I’m not wasting any time. This stuff is seriously good.   See …

Sweet Fruit Salsa with Cinnamon Chips

This is a sweet fruit salsa to eat with those Cinnamon Chips. This is such a great family snack, a light dessert, or an awesome appetizer to take to a gathering. It would even be great on a brunch buffet. People are always surprised at the twist on chips and salsa and you can’t beat that it’s super easy to whip up. Just looking at this makes me excited for summer! Take this to your first pot-luck and be the …

Baked Cinnamon Chips

Aloha! It’s good to be back! Thanks to Kate for holding down the fort without me. She and I are spoiled having two people to share the blogging load with, so when one of us is MIA it’s a lot of work for the other- thanks girl! So guess what? Today is my birthday. Well today as in Tuesday (at nearly midnight) when I’m sitting here preparing this post, not today as in Wednesday when you are all reading it. …

Chipotle Chicken Taco Salad

Blast from the past alert! Now that our blog readers are no longer just some of our college roommates and aunts who read our blog out of obligation, from time to time, we want to re-post some of our favorite recipes from the past that our newer readers may never have discovered otherwise. This is another Cooking Light superstar, with my own modifications. I love serving it at parties because a) it’s pretty much a guaranteed hit, b) it’s a …

Bacon-Wrapped Teriyaki Chicken Skewers

So since Sara is off frolicking in Hawaii, I thought we’d have a little taste of Hawaii here today! This is one of my favorite fun foods, especially because you can serve it as an appetizer or as a meal. It’s a twist on Teriyaki chicken and you’re going to be pretty hard-pressed to find people, especially men, unimpressed by meat wrapped in meat and then grilled. And speaking of grilled, these can be done in your oven, but for …

So it’s been a wild couple of weeks full of food craftiness and delicious treats! It’s been awhile since we’ve covered handy kitchen tips, so that’s what’s up! Don’t worry, we won’t be completely boring while Sara’s gone; something yummy is cooking up for Friday! I think everyone has a cookbook that they keep coming back to for good, basic recipes–you know, the Betty Crocker or the Better Homes and Gardens cookbooks, the ones they got from their moms when …

BBQ Chicken Cobb Salad

This salad was conceived when I needed to clean out my fridge. Sad but true. I had a whole bunch of stuff about to go bad as well as some leftover Old-Fashioned BBQ chicken last “fall.” I put “fall” in quotation marks because while the rest of the northern hemisphere was experiencing falling leaves and crisp, autumn air, I was still cohabitating with fire ants and mosquitoes in Satan’s Steam Room. So it was hot, it was muggy, and I …
