How to: Cook Chicken Breasts

So when a recipe calls for X cups of cooked or shredded chicken, I usually just use leftover chopped Fauxtisserie Chicken. But what about those days when I don’t want to cook a whole chicken just to use the leftovers the next day? Or when, maybe, it’s 3:00 in the afternoon and I haven’t started a chicken and my 2-year-old is napping and I can’t go buy a rotisserie chicken at the store (which reminds me of the time when …

Muddy Buddies {PB & Choco Crunch}

A few weeks ago I mentioned Muddy Buddies in my Sweet and Sour Meatball post.   And sure enough there were comments and emails asking what the heck they were.  Some of you have probably heard of this addictive little snack referred to as “Puppy Chow” but I refuse to call anything this delicious by a name referring to dog food.  That’s just gross.  (I know I know, “mud” isn’t all that much tastier than dog food, but still…) My little …

Buttermilk Cheddar Biscuits

Ya know, I hesitate to post yet another bread recipe because Kate and I aren’t too big on carbs… Hahahahahaha.  Psych.  (Remember when it was cool to say that?)  We’re pretty much obsessed with carbs.  And my obsession only increases with pregnancy.  Some people luck out and crave things like oranges and water.  (Who ARE you mutants anyway?)  All I want to eat is bread.  And baked potatoes.  And pasta. Toss in some cookies.  And then some more bread.  I …

Tzatziki

If you’re in Utah or have lived there, I’m sure you’re familiar with places like Crown Burger (which is hands-down the most popular), Burgers Supreme, and Apollo Burger (which is my favorite…sorry Crown Burger-ers!) They’re part steak fries and flame-broiled burgers and part gyros and baklava, but no matter what you get, it’s awesome. When I was pregnant with my daughter, my OB/GYN’s office was just down the street from what was, in my pregnant (at the time) opinion, the …

Flatbread

So…life is hectic in my corner of the world. We are closing on a house in *5 DAYS* and with that comes all the stresses of property virgindom and moving. With two kids who are THIS CLOSE to sharing the monkey cage at the zoo. So…in times of stress, I need two things: carbs and easy recipes. I got this recipe from our friend Leigh Ann last year and I think both she and I have seen it on How …

King Cake {Happy Mardi Gras!}

So this year has been kind of crazy–Valentine’s Day, Chinese New Year, and Mardi Gras are all happening within just a few days of each other (well, and President’s Day, but let’s face it, President’s Day has never excited people gastronomically in the same way…) We moved to Louisiana exactly two years ago. When we went to the grocery store for the first time, we weren’t just bowled over by the shockingly high price of milk, but also by these …

Baked Chicken Penne {Freezer Meal!}

We get a lot of emails requesting ideas for freezer meals.  This is another great one to make for a Valentines Day dinner.  I make a pasta dish quite often that is almost identical to this, only I use my Guiltless Alfredo sauce.  It’s actually become a Valentines Day tradition for my husband and I.  This version is a bit naughtier, and richer and completely delicious.  And the bonus is that it makes enough for 2 pans, one to eat …

Valentine’s Day Dinner: Garlic-Rosemary Pork Tenderloin

So awhile ago, I blogged about my new favorite side dish. And it’s still pretty much my favorite side dish, except now that fingerling potatoes are difficult to come by, I just buy a bag of red potatoes and pick out the smallest ones I can find and it works beautifully. One of my favorite things about those potatoes is this flavorful, garlicky/salty/tangy rosemary-infused crust that develops. Once, as I was secretly snacking on the roasted garlic crumbles washing the …

Fortune Cookies

I was trying to decide what to post for Valentine’s Day this year when I found myself immersed one Saturday afternoon in a Lindsay Lohan marathon on ABC Family. (Don’t mock, you know you love Mean Girls). As soon as the magic fortune cookie scene hit in Freaky Friday I knew that was it. I love making fortune cookies for all sorts of occasions, but the thought of tucking little love notes inside and sprinkling them with tiny hearts just …

Jalapeno Popper Dip

So…I kind of had something else planned for this post. It was slightly experimental…slightly disastrous picture-wise and didn’t taste as good as I remembered it. I was racking my brain for manly appetizers and was about to resign myself to bruschetta with “Who Dat?” toothpick banners (let’s not mock here) when, out of the blue, I remembered this easy, spicy, cheesy, completely addictive (and banner-free) dip or spread. You’re definitely not going to be wasting your entire day in the …
