So I kind of recently came into the possession of 40 pounds of tomatoes. Long story. Don’t ask. Blonde-ish moment. Note to self: for future reference, 40 pounds is a LOT of tomatoes.

Well, these tomatoes came to me pretty much perfect, which meant that I had about 2 days to figure out what I was going to do with them. My friend and I planned a canning date (sounds super cool, huh?), but I knew I wanted to roast a good portion of them. I love, love, love Sara’s Oven-Roasted Tomatoes and having them on hand to use in place of sun-dried tomatoes (I do not like them, Sam I am…) or the puree instead of tomato paste.

I’ve also been trying to cook more fish. The problem is, my husband hates it. The good news is he’s out of town on business, so I decided to combine some of my favorite flavors and use up that frozen salmon in the meantime.

Roasted tomatoes are so amazing with salmon–salmon is a stronger fish, so the acid in the tomatoes helps temper that sometimes-fishy flavor. Also, the salmon is complemented rather than overwhelmed by the roasted garlic in the tomatoes. Add in some butter, pasta, oregano, fresh garlic, and a 20-minute meal and I’m a happy girl!


Serve this with a tossed green salad and a sourdough baguette (try spreading it with some of the roasted tomatoes) and you have a super elegant-yet-easy dinner.

Quick and Easy Herb-Butter Penne with Salmon
Recipe by Our Best Bites

 

 

1 lb. salmon fillets
1/4 c. salted butter
1 clove garlic, minced
1/2 tsp. parsley
1/2 tsp. oregano
1/2 tsp. basil
8 oz. penne pasta
3/4 c. mashed Oven Roasted Tomatoes
Preheat grill to medium or the oven to 425. If cooking in the oven, line a baking sheet with aluminum foil and spray with non-stick cooking spray. Set aside.
Bring a pot of salted water to a boil. When the water is boiling, add the pasta and cook according to package directions.
While the water is heating, rinse the salmon fillets and pat dry. Set aside.
In a small bowl, combine butter, garlic, parsley, oregano, and basil. Reserve 2 Tbsp. of the butter mixture. Spread the remaining 2 Tbsp. over the salmon. Place the salmon on the baking sheet and cook for 10-12 minutes or until the flesh is opaque and flakes easily with a fork. Remove from the oven.
When the pasta is done cooking, drain and then return to the pan. Add the reserved butter, mashed tomato, and toss to combine. Place the pasta in individual bowls and then top with a piece of salmon. Serve immediately.

    trying this today, and so very excited! My house smells so good baking those tomatoes!! One thing-you have a 1/2 cup butter listed, but only 1/2 cube-stick-whatever showing. I'm thinking you meant the 4 T, because you say to use 2T, then the remaining 2T. Am I assuming correctly? Love you ladies! have a great time in NY, and congrats on the new baby!!

    I just found your blog this week and then tried this recipe last night. It is a winner! So easy and so delicious! I also assumed you meant 1/2 cube (not 1/2 cup) of butter. Tomatoes aren't in peak season here, so I used good quality sundried tomatoes (I oven roast a big batch each year!) And I used thyme instead of oregano (it's what I had on hand). My picky husband loved it, and my picky kids ate the salmon. We've been trying to find easy ways to add more fish to our diet. So, THANK YOU!

    Tried this today and I have to be honest, it was a little too bland for my taste. I love all the ingredients in this dish, but the butter sauce needed a little something. I’m going to combined it with another salmon pasta dish I make and see how that goes, the main difference is the sauce has chicken broth. Love the tomatoes though!

    I made this recipe last night, and loved it! I didn’t have the roasted tomatoes, I just used a can of diced tomatoes (and the liquid), but it was still delicious. I love that the directions help you plan out cookiing the meal (when to wash the salmon, when to make the butter,etc).
