So a couple of years ago, Sara and I had the opportunity to work with the lovely folks over at Good Bite. In addition to a few fun videos that we did, we contributed some of our favorite quick and easy recipes to this cookbook, Weeknight Meals: Delicious Made Easy.

It’s packed full of quick and easy recipes from some of our (and probably your) favorite bloggers like the White on Rice Couple, Simply Recipes, Steamy Kitchen, Picky Palate, Recipe Girl, and Matt Bites.

Speaking of Matt Bites, its author, Matt Armendariz, who is one of those bloggers that we secretly worship and is kind of a supernatural being in the world of food and food styling/photography, shot all the pictures for this book. Click here to see a behind-the-scenes video of him and the group of people who worked on getting the pictures ready for the book. I would embed it, but the video starts automatically and if there’s anything in this universe that makes me want to stab myself with toothpicks, it’s videos that start automatically.

And yes, he took pictures of our food…

and we blushed like giggling schoolgirls (even if we never met him in the process).

I know some of you were sad that my Sloppy Joes didn’t make it into the Our Best Bites cookbook–that’s because it wound up in this one!

It was such a fun project to work on and we felt so honored to be included with such a group of incredible bloggers!     One of my favorite meals to make is navajo tacos. It helps to mix up the dough night before, then the rest works up quite easily.

    Congrats! Our go to is chicken wraps with grilled (or chicken nugguts!) sliced into the tortilla, lettuce, cheese, caesar dressing… and smoothy.

    Our favorite quick and easy weeknight meal is cheese quesadillas with salsa. Just add some shredded cheese to a quesadilla. Top with another quesadilla. Put in over at 400 for about 4-5 minutes. Serve with a small bowl of salsa for dipping. My kids love it.

    My favorite easy meal on busy nights (although I have several easy ones) is French Dips. I buy the rolls, lunch meat, Swiss cheese, and make a packet of gravy mix and everyone likes them over here. This is really not a homemade meal at all, but it is warm and fills tummies and is cheaper than going out to eat.

    My favorite is a pasta dish with alfredo sauce, some frozen peas, diced red bell pepper, diced onion and some sliced mushrooms usually from a can and maybe some grilled chicken, if I have any on hand. Sauted the pepper, onions and mushroom, add the frozen peas and alfredo sauce and heat through. Cook some of your favorite pasta and pour the alfredo mixture over top. Add parmesean and you’re done.

    Our quick night meal is steamed cabbage with cheddarworsts. You cook the cheddarworsts first and then deglaze the pan with some water to steam the cabbage with. YUMMY!

    My husband, 17 month old, and I love spaghetti and meat sauce! In the time you can boil the pasta you can brown some meat and pour in a jar of sauce! Easy peasy! We sometimes treat ourselves to Texas Toast or garlic bread too, another quick fix!

    I was actually kind of surprised at how quick and easy your butter herb penne with salmon was! What a wonderful surprise, since it’s so delicious! Quick and easy is key for a full-time student, wife, and mother!

      My favorite easy meal has to be taco salad! Just whip up the filling and let everyone choose their favorite toppings and voila! Dinner is served! I’m a mom and foster mom with busy kids and it often gets crazy around here. Not only does taco salad get the troops fed quickly, it affords those picky eaters the flexibility to add the things they like…and if someone isn’t craving salad, I just make tortillas available and they can do that instead! Please pick me…I need some great, quick recipes to feed our rugrats! You rock, OBB!

    Cornbread. Just plain cornbread. Every one loves it for dinner! And it works really well with powdered eggs and powdered milk for food storage!

    My favorite quick and easy weeknight meal is tacos. Sometimes they’re breakfast tacos and sometimes they are ground turkey tacos. Either way we always have eggs, bacon, a pound of ground turkey (either in the fridge or freezer), onions, some sort of bell pepper, some sort of lettuce, tortillas, cheese, and salsa. Most of the ingredients are versatile for other dishes and/or don’t spoil to quickly.

    my favorite quick and easy meal is crockpot creamy cheese chicken over egg noodles. 3 or 4 chicken breasts in the crockpot with 1/2 a bottle of Italian dressing. Cook in the crockpot. Then about 30-45minutes before I shred the chicken with a fork then add 1 can cream of chicken, 1 stick of butter, and 1 8oz cube of cream cheese. Then I move on to doing the rice or egg noodles. I love that it’s so easy to do especially with life working full time nights as a nurse with 3 children under the age of 5.

    frittatas are a staple at our house. Eggs, cheese, broccoli and chicken or ham and cheese, or sausage and onion, really whatever I have in the fridge works. My kids love them! And they are perfect for leftover morning breakfast.

    Hamburgers on the grill are a favorite quick meal. We soak them in a bullion sauce after grilling for a really juicy burger. Works great with veggie burgers too.

    Ours is for sure pasta. My kids refuse to eat sauce of any sort, and only want butter and salt on their pasta … so it’s super quick. My husband and I usually go for the traditional pasta with sauce of some sort, lol. When I plan ahead though, chicken taquitos are my favorite.

    My favorite stand by is what I call Chicken & Rice – chicken cooked in the slow cooker then shredded, with a homemade Cream of Chicken and cream cheese added to the juices to make a creamy sauce, served over rice (from the rice cooker of course).

    I love anything easy after a long day at work. If I get up early enough, I like to cook potatoes and a pork loin in the crock pot all day. Then when I get home all I have to do is take the lid off and enjoy!
